Look at this perfect little acorn squash! Working with a squash is a little intimidating at first because they’re so hard to cut. Be careful when you slice them and I promise that it is quite simple once you crack it open.
You know when you go to a cafe to eat, they always have these “pick 2” combos and you’re forced to make the IMPOSSIBLY tough decision of choosing 2 things between soup, salad, and a sandwich? How do you ever choose? What if I want all 3?? It’s madness I tell you!
Rant aside, we went foraging recently and got these amazing mushrooms and wild leeks. What a fantastic way to rediscover one of our favorite ingredients! We even took the wild leek seeds back to our mamas to grow. We only took a handful of leeks, and there wasn’t enough to make a dish on its own. Squash is thankfully in season so I married the two together in this soup. You gotta give this soup a try!
