Rich and luscious homemade tomato soup made with beautiful roasted veggies, sun-dried yogurt and basil? Oh my my, SIGN ME RIGHT UP!
It’s super easy to make! We were feeling a little under the weather last week and we thought soup would be the perfect sick food! You don’t have to be sick to have soup. Let’s be real, this soup would bring you warmth and comfort all year long, especially during the winter months. The best part is that this does not take many ingredients at all. Let’s start with the base: tomatoes, red peppers, garlic, onion, and some thyme (and time). Get it? Like roasting times thyme? 🙂
Pop it in the oven and get the veggies beautifully roasted and the natural sugars to caramelize.
Doesn’t this already look mouth-wateringly good? You just wait, we’re gonna add even more bold flavors. All we have to do next is fry off some celery and tomato paste in a large pot, add vegetable stock, these lovely roasted veg, basil, and blend.
To add some texture and make things look more fancy, mix some yogurt and sun-dried tomato and swirl it around on top and BOOM, you’ve got a lovely bowl of comfort ready to get in your belly! Oh and don’t forget to get yourself a nice baguette, rub some garlic and olive oil on it and give in a quick toast. You’ll thank me for this super simple homemade tomato soup later.
