Yup, it’s Jerk Chicken time! Say you’re at a festival with food vendors and trucks scattered on the street. You can’t decide what to have but you see a long line-up next to a big grill. What’s on the grill, you ask? That’s right, Jerk Chicken! This is one of those must have dishes; it’s juicy, tender, and BANGING with bold flavors. Since I don’t have a grill ready, this Oven Bake’n Finger Lick’n Jerk Chick’n is the next best thing! Warning: You will feel the heat with this one!
So we try to watch what we eat everyday and limit the guilty foods we take in. You know what’s great about eating relatively healthy on a regular basis? It’s that you can eat a cheat meal here and there without much guilt. So that CHEAT meal becomes just a TREAT meal. Actually, I don’t even know why I’m saying this for the jerk chicken, it’s really not bad at all! It feels naughty but it’s not fried or anything. So forget cheat meals, this is just a straight up treat! Oh, and it’s as easy as 123. Let’s do this!

Jerk chicken has always been one of my favorite foods. It’s just so satisfying to eat! I decided on drumsticks because that’s what I had in the fridge but you can easily go with thighs or breasts. The drumsticks make it easier to eat with your hands, you know, for the finger licking part of this!
I served mine with some homemade Pickles, which I promise I’ll show you guys soon! The vinegar really works well, cutting down the spice, but only to prep you for the next piece of course.
