Let’s start with the beef. Often times beef ribs are cut along and in between the bones, creating large chunks of bone-in beef that are great for braising. However, many Asian dishes call for the ribs to be cut super thin across the bone. This thin cut is called “flanken”. Flanken cuts are about 1/2 an inch thick with pieces of the bones on each slice. These are absolutely perfect for barbecue because of how well they take on marinades and how quickly they cook thanks to the thickness.
