Ah, the Monday blues sure does suck. What really helps is a bowl of rich and creamy goodness. What am I talking about? This (Monday) Mushroom Risotto of course! Every grain of rice is infused with mushroomey flavor and aroma. Seriously, this extremely satisfying dish made my Monday suck a little less and it might just help yours too!
This weekend was a busy one, and although I feel like I almost say that every weekend, we really needed a quick and easy dish to smooth out our schedule. This is just that, and it’s damn delicious! Oh and we had enough to have it today as well, hence aiding the dreaded Monday blues. This is a fantastic recipe to have up your sleeves for a quick weeknight fix or when you have guests over.
Fair warning though, making risotto is really a labor of love and requires full attention. It requires quite a bit more work than the Carbonara or Chorizo Penne we’ve made before. You need to keep an eye on it and stir the whole time, which can be a little bit of a workout for your arms. But hey, if you can cross off your workout for the day AND have dinner ready at the same time, that’s a win in my book!
Look at these gorgeous oyster mushrooms! Sometimes mushrooms scare me. I mean, some of them look like they have questionable edibility. But when even the local chain grocery sells ‘wild’ ones, we can assume it’s safe to eat right? Well, we ate ’em! Just don’t go picking wild mushrooms on your next hiking trip!
With 2 types of mushrooms in the risotto, 2 other types grilled on top, and the stock used to cook the risotto, the flavors are intense! Every grain of rice is heavily infused with a, well, mushroomey aroma! If you love mushrooms like we do, you will sure love this risotto!
