A healthier version of a classic favorite, Shepherd’s Pie, with a not-so-classic twist! It’s comforting and luscious, just in time for National Cook a Sweet Potato Day! Swapping to Sweet Potato really helps the nutritional value of the dish. This one is made with beef because Tina still wouldn’t eat lamb (she’ll come around).
Although, it feels like there is a “national day” for everything nowadays, sweet potatoes do deserve to have a day of their own. Putting it on of a bed of richly flavored minces to make a Shepherd’s Pie seems fitting to pay some homage to this beautiful, healthy, and versatile ingredient. Speaking of minces, we are adding a bunch of aromatic flavor enhancers that turn the boring cheap minces to something fantastic! It’s not wonder why this dish is a classic favorite. In my opinion, switch to sweet potatoes makes it even better!
But then again, I am absolutely obsessed with sweet potatoes, so I guess it’s kind of biased. I am urging to try this and decide for yourself, but I’ll bet you would love this sweet potato twist!
