Ingredients
For the Aioli (Garlic Mayo)
  • 1clove of Garlic
  • 1/2juice of Lime(or lemon)
  • 1/2cup of Oil(I used Canola + Olive Oil)
  • 1 Egg Yolk
  • 1pinch of Salt
For the BAT Sandwich
  • 8slices of Bread
  • 8strips of Bacon(thick cut is preferred)
  • 2 Avocado(sliced)
  • 2-4 Tomato(sliced – depends on the size of the tomato)
  • 1 Jalapenos(sliced – optional)
Instructions
For the Aioli (Garlic Mayo)
  1. Mash the Garlic clove into a paste in a pestle and mortar with a small pinch of salt. (If using a blender, simply add all ingredients and mix).
  2. Transfer paste to a mixing bowl and add Egg Yolk and Lime Juice. Mix thoroughly with a whisk.
  3. Add a few drops of Oil in and whisk until combined. Continue to SLOWLY add the oil while continuing to whisk. This prevents the oil from separating with the sauce. As it thickens, you can add a little more at a time but be sure to fully combine before adding more. (This will be more than enough for the sandwiches, the remainder should last a week or so in the fridge).
For the BAT Sandwich
  1. Preheat oven to 400(f) degrees. Line Bacon in single layer and place into the bottom of the oven. Bake until crispy, about 15-25 minutes (depending on the thickness/cut of the bacon). Check up on it after 15 to check for desired crispiness. For maximum crisp, use a wire rack.
  2. Bake the slices of Bread for 5-8 minutes. Once done, spread a dollop of Aioli on one side of each slice of Bread.
  3. Arrange about 1/2 an Avocado (sliced), 4 slices of Tomato (sliced), 2 strips of Bacon, and a few slices of Jalapeno (optional) per sandwich. And VIOLA! You’re all set!
