Mix all the Blackened seasoning ingredients in a bowl. Sprinkle over both sides of the fish filets ensuring all sides are covered well.
Heat a tablespoon of Oil on high heat in a cast iron skillet (or any thick bottomed skillet). Lay fish filets but do not overcrowd the pan or move the fish! Cook for 2-3 minutes each side, flipping once.
Serve with your favorite sides and that’s it. It’s simple as that!
Any fish filet will do such as cod or snapper. I cut them in half to make it easier to work with but if your cooking surface is big enough, feel free to keep whole.
