Ingredients
  • 10whole Eggs
  • 1large Bell Pepper(sliced)
  • 1large Broccoli(florets cut)
  • 3cloves of Garlic(sliced)
  • 1/2 Onion(sliced)
  • 1 Chili(optional – chopped)
  • 1teaspoon of Paprika
  • 1teaspoon of Nutmeg
  • 2teaspoons of Oil
  • 1pinch of Salt
  • Fewturns of Black Pepper
  • 1handful of Cheese(optional – use cheese of your choice, I used Parmigiano Reggiano)
  • 1handful of Arugula(optional)
Instructions
  1. Preheat the oven to 400(f). Crack the Eggs into a bowl and lightly beat until mixed.
  2. Heat a large deep skillet to medium high and add Oil (use a non-stick or iron skillet if you can. If using stainless steel, heat until almost smoking before you add the oil).
  3. Fry Broccoli, Peppers, Garlic, Onion, and Chili for 3 minutes, stirring often. Add Salt, Pepper, Paprika, Nutmeg and stir.
  4. Add the beaten Eggs into the skillet. Twirl around and flatten to make an even top. Lower the heat to medium, cover and let cook for 3 minutes.
  5. Remove lid and place in oven uncovered for 10 minutes. To get a nicely browned top, remove from oven and set to high broil. Place back into the oven under broil for 2-3 minutes. (Optional – add cheese before placing into the broil.) ALL DONE!
  6. Also optional, top with a handful of arugula.
