Garlic Shrimp with Chili & Ginger

Ingredients
  • 1-1.5pounds of Shrimp(large/jumbo – I used 16-20 per pound)`
  • 5cloves of Garlic(finely chopped)
  • 1teaspoon of Ginger(finely chopped)
  • 1-2whole Chili(finely chopped – I used Thai red)
  • 2tablespoons of Cilantro(finely chopped)
  • 1teaspoon of Cornstarch
  • 1/2teaspoon of Salt
  • 1/2teaspoon of Black Pepper
  • 1tablespoon of Oil(high smoke point – I used Canola)
Instructions
  1. Devein Shrimp if not already done by cutting a slit at the top of the Shrimp and removing intestine. Pat dry and toss in a bowl with Salt, Black Pepper and Cornstarch.
  2. Heat Oil in a frying pan on high heat. Place Shrimp in single layer and sear for 1-1.5 minute without moving.
  3. Flip over and sprinkle in Garlic, Ginger, and Chili. Sear for about 30 seconds before tossing to mix thoroughly for another 30 seconds or so, totaling 1-1.5 minutes.
  4. Remove from heat and mix in Cilantro. That’s it! It is that simple. Enjoy!
