When I first started making fish, I always thought, why does it taste so much better at a nice restaurant than when I make it at home? The key to a really good piece of fish is really, the piece of fish! Get the freshest salmon you can and do not overcook it! In fact, if it’s super fresh, it won’t have any of the “fishy” taste to it and you can eat it medium like a piece of steak! Mmm
