Let’s face it, Seared Scallops are delicious by themselves, but when you finish it with a Melted Roasted Garlic Butter Sauce on top, it becomes absolutely heavenly. I mean, everything is betta with butta, right? Serve the rich buttery garlicky scallops with the same arugula and tomato salad we made for the lamb chops and you’ve got yourself a fantastic light supper.

stomach heart. When I grew up and started learning how to cook, I began to really appreciate just how beautiful this ingredient really is. It is best to keep the recipe simple and let the star shine when it comes to an amazing ingredient like this – this one is exactly that! I mean, just look at these beauties!
Melted garlic butter is also near and dear to my heart, but for no particular reason other than the fact that it tastes amazing. However, garlic is a bit strong for such a delicate dish so I decided to roast the garlic to calm it down and sweeten it up. It might lose some of its prowess to fend off vampires but what you get in return is a sweet garlicky paste that perfectly compliments almost anything!
Honestly, for something that tastes so amazing, Seared Scallops is really quick and easy to prepare. They are absolutely UNREAL!
