Okay, so Christmas is in 2 days, guys. 2 days! That means quality time with friends and family, fun gift exchanges, and of course, LOTS and LOTS of good food. STRETCHY PANTS, check. HOLIDAY APPETITE, check. Seriously though, I can’t be the only one super excited about the holidays being a great excuse to do some non-stop eating right?
Here’s something for ya. Whether you’re stressing over what to make for a few hungry friends and family, or you just want to enjoy a hearty meal after a long day of work, this carbonara will be a warm and satisfying reward that you won’t regret spending 15 minutes on (less time than a frozen pizza!). No fuss, no muss, just a quick and easy solution to the “what’s for dinner” problem.
Allow me to clarify that there is no claim being made that this is authentic Italian or anything. It’s not made with pecorino romano, guanciale, or pancetta even, but I mean, there’s bacon, what’s not to love? What I do know is that it is ABSOLUTELY delicious and super simple to make!
MmmMMmMm look at all that bacon goodness. First, get the spaghetti into boiling salted water and start chopping the bacon and garlic. Then, grate the cheese and mix it with the egg yolks (reserve some cheese for garnish). Oh and don’t forget to add some freshly ground black pepper.
Next, we drain the pasta and mix it with the bacon on the pan. Add a bit of the pasta water in the pan and toss well. Then remove the heat and mix in the egg mixture. Finally, garnish with more black pepper, more cheese, and sprinkle with some cilantro and microgreens/sprout if you’d like; VOILA! Once you’ve mixed it through, you should have a creamy, smooth, beautiful orangey/tan colour plate of pasta that is sure to brighten up your day. Seriously, it’s that simple.
