Breakfast is difficult, especially when you work a full time job. It’s really easy to stop by the coffee shop near your work and grab a sandwich. I know I do it all the time. A few months ago, I started making these fish cakes to bring to work for breakfast because they are so simple to make and they keep well in the fridge. Breakfast problem solved! Oh and these are great for brunch on the weekend too!
