The story begins with the homemade dressing:
Grinding up garlic and pistachios into a paste adds ‘oomph‘ to an otherwise ordinary sauce. I used a pestle and mortar to leave more texture in the paste but a blender or a good ol’ knife n’ board would do. Next, mix the paste with the rest of the ingredients for the sauce. Boom, you’ve got yourself a lovely, tangy dressing that would surely brighten up any boring salad. Now all you have to do now is slice n’ dice everything into bite size pieces and combine with the dressing. Continue the pistachio story by crushing and sprinkling more on top. This beauty goes perfectly with any main dish you decide to cook up; add some protein and you’ve got yourself a fantastic light lunch.
